Sha Cha Noodles or Satay Noodles is the most common snack in Xiamen. Add satay sauce to the chop soup and stir well; boil it over a high heat, turn to moderate heat, and add refined salt and aginomoto to make the satay broth. The golden and smooth oil noodles of southern Fujian are selected to make this dish. Cook the oil noodles and green vegetables in boiling water, take out to a bowl, spoon the broth over it and then add the finishing ingredients like fried tofu, blood rice cake, hog intestine, pork kidney and duck intestine.
